Blueberry Cheesecake Choco-chip cups

As promised, I'm posting the recipe for the yummy cheesecake choco-chip cups with blueberry toppings. As per source, this recipe is packed with carbohydrates which we all know is important to provide us energy for the whole day activities.

Ingredients:
12 pcs. chocolate chip cookies
1 package of softened cream cheese
half cup of  Carnation condensed milk
1 large egg
1 teaspoon vanilla extract
orange marmalade, choco chips or fruit of choice for topping

Procedure:
1. Pre-heat oven to 325 deg F
2. Paper-line 12 muffin cups and place 1 cookie in each
3. Beat cream cheese until fluffy then gradually stir in condensed milk, egg, and vanilla extract in medium bowl until smooth. Pour about 3 tablespoons cream cheese mixture over each cookie in cup.
4. Bake for 15 to 18 minutes or until set. Cool completely in pn on wire rack. Top with marmalade, choco chips or fruits. Refrigerate for 1 hour. serve.



I got this from the Nestle recipe book I won from a cooking demo my sisters and I attended years back. It was signed personally by chef Arnold Bernardo. He is such a cool and funny guy.

Blueberry day


I spent the whole afternoon figuring out what to do with the can of blueberries my sister bought last month. This has been a pending request for months already. I only decided to try it yesterday because I was inspired on this new blog for Nanay. This is for her birthday.
I came up with two recipes. The cheesecake choco chip cups with blueberry on top was Sharla’s request and the mini blueberry muffin is for Sofie. Ichirou, my eldest son enjoyed the cheesecake because he loves cheese.
